At Tomasu, it’s never about simply adding new products to our lineup. For us, every creation represents a deepening of our craft, not just a broadening. Tomasu Salt is no exception—a product that naturally evolved from our production process and philosophy, and one that we’re proud to finally share.

Tomasu Salt wasn't something we deliberately set out to create just to have something new. Instead, it evolved organically, as one of the core ingredients in our soy sauce—gros sel de Guérande (salt)—seemed to demand a life of its own. We made the first version of this salt 5 or 6 years ago, but at the time, we were so focused on our other products that it stayed in the background.

It wasn’t until we began using this salt ourselves daily, that we started to seriously consider making it available to others. It felt like a natural progression of what we were already doing. In short, Tomasu Salt simply made sense.

We use gros sel de Guérande (salt) salt as one of the four foundational ingredients in our soy sauce, and now we’ve taken it a step further by infusing the salt with our soy sauce and aging it in former soy sauce barrels for a minimum of 12 months. This process allows the salt to absorb the rich tones of both the wood and the soy sauce, resulting in a product that is rich in umami and full of depth.

We’re eager to see how you, will incorporate it into your cooking. In our experience, it works beautifully both in coarse form and finely ground. Our personal preference is to grind it using a mortar and pestle for an enhanced flavor experience, but if you prefer to use a grinder, we recommend a ceramic salt grinder.

We’re happy to present Tomasu Salt alongside our sambal—together, they form our interpretation of "Salt & Pepper". And we’re excited for to be able to share this with you!
